Unpacking the many varieties of instant coffee

There are various different types of instant coffee, each offering unique styles, flavours, textures, and types of production. Here's a breakdown of the main types:

1. Spray-Dried Instant Coffee

This method involves spraying liquid coffee into a hot chamber, where the droplets dry mid-air into a very fine powder.

  • Taste: Milder, with a slightly burnt or bitter edge.
  • Texture: Fine powder.
  • Cost: Usually the most affordable option.

2. Freeze-Dried Instant Coffee

In this method, the liquid coffee is first frozen, then dried in a vacuum, which preserves its aroma and flavour. This results in chunky, granulated crystals.

  • Taste: Much richer and stronger than spray-dried.
  • Texture: Granulated crystals.
  • Cost: More expensive due to a higher quality.

3. Agglomerated Instant Coffee

This type is made by steaming spray-dried coffee powder to make the particles stick together into larger, uniform granules.

  • Taste: Mid-range - better than spray-dried, not as rich as freeze-dried.
  • Texture: Granules that dissolve easily.
  • Cost: Moderately priced.

4. Micro-ground Coffee (Hybrid Instant Coffee)

Here, finely ground roasted coffee beans are blended with instant coffee.

  • Texture: Powder with micro-ground bits.
  • Cost: Premium.
  • Example: Common in high-end options like Starbucks VIA.

5. Instant Coffee Mixes

These come as convenient pre-mixed sachets, typically in the following forms:

  • 3-in-1: Coffee, creamer, and sugar
  • 2-in-1: Coffee and sugar
  • Taste: Often sweetened or flavoured (mocha, hazelnut, vanilla, etc.)
  • Use: Just add hot water - great for on-the-go convenience.
